HALLOWEEN!
Halloween was super fun this year, Jake and i dressed up as pirates and Tristan was our little pirate monkey! We went over to some friends house and partied!! Ya, and those awesome pirate hats; Jake and I made them!! That's right, made them. Out of a card board box, an old sheet, duct tape, and spray paint. It was definitely a Halloween to remember!

Yummy recipe!!
I tried a new recipe last night and it turned out really good! It makes enough for 2 8in pans or 1 9x12 pan. I did 2 8in pans and froze one.
Chicken Lasagna rolls
1 small yellow onion, chopped
3 TBSP butter
3 TBSP all purpose flour
1 can chicken broth
1 cup milk
1 1/2 cups shredded monterey jack cheese
3 cups diced cooked chicken
6 cups frozen chopped broccoli, thawed and drained
2 eggs lightly beaten
3/4 cup dry bread crumbs
1 jar diced pimentos
1/4 cup minced fresh parsley
1/2 teaspoon salt
12 lasagna noodles, cooked and drained
1. in a large sauce pan, saute onion in butter until tender. stir in flour until well blended. gradually add broth and milk. bring to a boil, cook and stir for 2 min. remove from heat; stir in cheese. pour 1/3 cup cheese sauce into greased pan(s). set aside.
2. In a large bowl combine 1 cup cheese sauce, chicken, broccoli, eggs, bread crumbs, pimentos, parsley and salt. spread mixture into lasagna noodles and roll up. secure ends with toothpicks.
3. Place roll ups, end down in baking dish. top with remaining cheese sauce.
4. Cover and bake at 350 for 40min. uncover sprinkle with extra cheese if desired and bake 5 more mon. discard toothpicks before serving.
if cassarole is frozen: thaw in refrigerator for 8 hrs. bake as directed.

Halloween Seek Peek
We got Tristan's Halloween costume in the mail and couldn't wait to try it on!! He's sooo cute! I'm going to make some wings for him and a little hat to make him a flying monkey! Then I'll dress up as the wicked witch of the west. We still haven't figured put who jake will be. Maybe one of the soldiers. But i can't wait!! Yay Halloween!! Having someone to dress up makes it sooo much more fun.

Halloween Topiaries!
Made these super cute Halloween Topiaries with Allison and Chelsey the other day while the guys were studying. They turned out super cute! One is made with tissue paper, one with sprinkles, and one with candy corn! Thanks Allison for the great idea!
